Garganelli allo zafferano (with saffron)

Ingredients for 2 people:
170g of garganelli
2 hot peppers
8 pistils of saffron (or the equivalent)
salt

It is prepared like a risotto. Put a tenth of a liter of water in a pot. Bring the water to boiling point, add the pasta, stir, add the saffron and salt. Slowly you have to add the boiling water you will have separately warmed, using a large spoon. This way the pasta absorbs the water bit by bit so as to remain dry at the end. Add some salt according to your taste (you may think there is no need to add more salt). Serve in the dishes and dust with hot pepper.

Wines: dry white wine, rosé
